p.s. please forget SSRs for a while ,im kinda salty for nasuverse-eternity. And you guys can add welfares, or even upcoming servants that already released in jp.
I'd highly recommend grailing FSN Cu for his survivability skills, and his single target NP gives good damage
I'd also recommend grailing Euryale. Her damage is pretty good against male servants, so she's a bit more niche than Cu but it's still worth it imo
"Who should I grail?" is a really common question and has two answers, but you have to choose which one of them is the true one:
1. Servant you love - in other words: waifu/husbando. This route ignores all metagame and strategies and is followed by your heart. You love Liz? Grail Liz! You fell in love with Astolfo after watching /Apocrypha? Grail Astolfo! Emiya was best badass guy from /stay night? Grail Emiya! Euryale is so adorable? Grail Euryale! Arash is so goddman useful? Grail Arash!
It's hard to describe because... it's just hard to describe some1 else feelings :)
2. Metagame. This route is followed by brain and strategic way of thinking. If it comes to grail something 4star (or less) the most common choices are:
- Cu Chulainn (regular)
- Andersen
- Heracles
Due to being extremely powerful and useful through the game, regardless of your progress in main story, amount of servants (even people who have strong servants like Scathach or Mama Raikou go for grailing those guys) and - what is the most important - servants of rarity less than 4 star are really easy to make them NP5.
Of course those are only few options (but imo still best), rest of them are listed under "Tier 1" and "Tier 2" here:

Personally I grailed the 'original' Arturia because I love her since I watched 1st episode of Fate/Zero 5 years ago. She's quite weak in-game, rest of the SSR saber outclasses her and grailing 5star servant makes you wanna cry when you see your QP balance but I'll never regret this decision. I love her, regardless of meta
What I'll grail next? I don't know. Probably another member of my harem (if I'll be able to summon one of them...) - Nero, Mordred, Altera, alternate versions of Arturia, Jeanne.
i agree with your action of grailing baber.. i grailed baber alter, 7 grails worth, strictly cuz i fell in love with her like shiro in the wack fate/stay night (not ubw). but then when i watched the fate/grand order anime movie and saw baber alter,my heart damn skipped 2 beats she's been my fav servant ever since and i can't wait to see her in the new heaven's feel movie.
We should make a lv100 Artoria club,. Have you seen the cooking anime (Emiya-san Chi no Kyou no Gohan)? The Saber cuteness is off the charts on that one, i can't deal with it.
I grailed Saber Alter too! I like her more than OG saber. But I love them both. And she looks bad ass on the HF movies :D
Herc i guess since zerk scale better then most for highter stats.
From the other, i see many grailing ushiwakamaru (or whatever is name is) becouse he is one of the most usefull rider in game
OG Cu is also a nice candidate for harder content and solo.
For the other, Medusa, becouse she is medusa, how could you not grail her?
i suggest you to think on grailing servant who can actually do lot of single target damage. Most of the time aoe servant dont need grail for their work.
Still, do not invest grail for the sake of doing it, becouse its a limited material
S/N Cu, because he's immortal if grailed and 10/10/10.
Euryale, to have a pseudo-Orion crushing every1 p*nis-enemies.
Lu Bu, to have a pseudo-Herc, with pierce defense included (help on challenges a lot).
Herc, he deserves, as he is a pseudo-5* even without grails.
Salter, she gets bigger attack than OG Artoria lv 90 with 2 grails, plus a better NP multiplier...
KintokiRider, best ST Quick Rider in the game.
Chloe, one of the best Archers.
Martha Ruler, with 1 grail she already surpasses Jeanne Ruler in attack; only 4* Ruler (that class that resist 6 classes) and has a heal, so, grail her for even more HP and be more almost-unkillable inverted berserker.
Saberlot, as he the best ST Saber who is not Okita or Musashi, and is a monster of crits, but lacks any form of survivability
I am considering to grail Kid Gil, 2 of his skills (Golden Rule A and Charisma A+) are 5* level, and he really is good. Sadly, his NP, even on NP5 and post interlewd hit sorta poorly.
Lancelot has always been an awesome grail, extremely versatile pick with godly farming and strong ST potential. He's budget Raikou right now with sucky animations...and some would even say that he evolves into Raikou on steroids with amazing animations two years from now (*cries in the corner*).
Heracles is also recommended if you use him a lot, it can compensate for the lack of stats on his Bond CE. It's strictly for hard content though, it's not as versatile grail as Lancelot.
Disclaimer: I have no intention of grailing these guys. I'm one of those "Grail4love brah" hippies
There are a bunch of decent SR and 1-3 star servants are good candidate for grail. Some of them have decent skills, some of them have decent attacking traits, some of them have useful utility.
I have grailed Herc, Sir Lancelot and Euryale. And I also see advantages for lv90 welfare Shiki, Kuro, Kintko since they are NP5 with good performance. Although even grailed 1-4 stars' attacking status/hp are still not pairable as SSR, but indeed make them stand longer, or hit harder. Off course, your loved servants first (Meme also included). I have seen lv 100 Oppression several times.
Upcoming R servants :
- Hozoin Ishun, a quick meme and one of the burst damage king.
A Saitama that exist in FGO to be exactly, Bald servant + Massive damage + strong kit.
Once you've seen him, you'll know he's some kind of monster that hiding deep inside FP gacha.
A 3 star with the power of 5 stars and he even exceed most 5 stars in terms of damage.

For the SR servants :
- Penthesilea, a pure berserker as her job is to berserk and destroy things.
One of a Buster servant that only focus on raising damage.
A hard-counter to most Greek Heroes/servants such as Heracles, Achilless, Atalante and etc.
She wreck things so hard, you won't even know your enemies/bosses has been defeated already.
In terms of ATK, she's only second to Heracles and in terms of damage she bested most SR berserker and some SSR berserker.
A good choice if you want to clear some things ASAP alias fast and clean kill.
'' don't tell she is beautiful nor cute, but if you had already told her so. Send her to some island with a Hercules, Medea or random Greek enemies ''.
If Hozoin is Saitama, then Penthesilea is Kratos.
I Grailed Gilgamesh because, GILGAMESH! and plan on Grailing King Hassan (and losing my credit card privileges for a year) when I get him. Beyond that, I'm gonna try for Proto Arthur and lastly Gorgon. My QP is gone, My gameplay is unnecessary, but I will have my favorite characters above the rest!
I grailed Cu Proto for reasons already stated (saved my butt many many times, has a strong NP and I like him as a character). Also grailed Bedivere, because I needed a strong Saber and I like him as a character... I may have been a bit trigger-happy with the grails at that point.
My SRs/SSRs are not yet at the level of needing to be grailed, so I haven't thought about it much. Will probably grail Kintoki Rider for his all-around awesomeness though :D
