Pretty sure drops are determined when the quest is started not when you kill the enemy.

Is there any data that shows whether or not Overkill affect Drop rate or chance? I don't think it would, but I keep have the instinctive urge to over murderify enemies for their respective drops, and wanted some research that definitively say that I was correct logical or instinctively,

yeah that makes sense, I was just wondering if there was any hard data out there to prove it.
Well, when I have the game crash in the middle of my attacks and I have to redo my turn, crit star distribution and drops have never changed. And I used to play on an underpowered tablet that would crash at least once every time I played.
My star distribution changes sometimes when I close the app. Never checked the drops.
I severely doubt it. Setting aside whether or not it's logical for the game to give you extra rewards for such a silly reason, it doesn't make sense from a technical standpoint. Drops are surely decided serverside, otherwise they'd be susceptible to hacking. Combat is handled clientside. Basically, the server doesn't know whether or not you're overkilling things. It's possible for the client to send that information to the server before drops are decided, but then that would result in the drops still being indirectly susceptible to hacking.
