I know AoE saber is probably the best choice, but unfortunately, I don’t have any nor do I have any good sabers. The only high level servants I have available is just Archuria (not going to be ideal) and Jeanne (normal).
How can I beat cu and scath in this situation?

I had a whale friend with MLB Princess CE and NP5 Artoria. I think the final NP dealt around 950k damage, which is more than enough to one shot both.
The only problem was gaining the NP for both my Altera and the Artoria (I thought I needed both NPs). Waver helped a lot with that.
bring at least 2 taunter. I kill them with 2 excalibur. or you can just chip their hp little by little and after both at least around 150k - 170k Hp just blast them with excalibur. I bring Mash and D'eon as taunter. back line support Nightingale, Nero as safety and Waver as support. the only one dead is Mash as she eat gae bolg back to back. kill them in 6 turn

since you have mash+jaenna you should be able to get %150~ before round 3 then they will put 3 turn np seal so you should get %200 and chip scatch much as you can during that(jaenna and mash should able to provide you 3 turn they will have thier np too) .When cu charges hes np use jaenna stun on him and gandr on scatch so they cant use evade and you are free to use %200 np that should 1 shot cu but scatch might left with bit hp so definetely put someone with ignore invicdible CE on your reserve to fnish it up or someone like beowulf (sure hit np) with %80np CE to fnish it.
