This is anime specific really. I really really really love the OST for Fate Zero and it's probably my favorite anime in the series (well outside of carnival Phantasm but let's not count that) but I'm actually gonna have to go with apocrypha on this one ...Like as discombobulated as the story was for apocrypha and as bad as the animation got for the hype fights in the end (them limited budget works), the music was just super hype throughout. Even though it's variations of the same track over and over again, that track gives like a gladiatorial vibe to the whole thing. Versus tracks like Point Zero giving more of an impending doom vibe which is also very hype to be honest.
How bout you guys? What OST do you like best?
If you're talking only about fate then I'd go with Zero, if you're talking about type moon I'd go Kara no kyoukai, if you're talking anime in general I would need weeks to think about it lol.
There are also some pretty nice tracks on fgo like bonds or boarlet's theme departure, but it's not #1 by a long shot.

They're all variations of the same theme which is really the theme of the anime but that theme is pretty hype. The only exception is Knight of the Rebellion which is of course Mordred's theme. Really fate apocrypha is borderline almost on the same tier as Guilty Crown (meh anime with an epic OST) for me and would be if not for two characters that should have gotten more time and story: Fran and Mordred. Heck if they'd made the story about Mordred it would have been so different and so much better. As it is though the story is shit tier. Fuck Jeanne (completely underdeveloped and actually boring) and definitely fuck Sieg...worst protagonist of all time. Honorable mention for what they did with Jack. Underdeveloped character with obvious fan service but the idea of split personality Loli yandere serial killer is amusing.
I really liked knight of rebellion, I think that will be my catalyst in future rolls.
However, I wouldn't put it in the same tier as guilty crown, Sawano's work has something only a few composers can achieve imo, and it doesn't come just from talent (even though most of his work sounds the same lol) I loved xenoblade chronicles X's ost.
I completely agree with you there, mordred should've been the MC instead of that terrible pair with no personality.
Oh the music isn't for sure. I just meant same kind of anime I suppose aka this music doesn't belong in this anime.
Also I just realized the Camelot singularity music is actually based off this theme kind of. Probably why I like it so much
forget everything I said lol "Apocrypha" just blew my mind. It's the kind of song that just forces you to close your eyes and transports you to another land.
Ikr xD like I love the fate zero track. Point Zero just makes me think of Gil every time and you feel the weight of the Grail war or of war and kiritsugu's struggle buuut the apocrypha track just gets you so hype lol. Probably the real reason all the fight scenes felt like a let down with their poor animation

Ushi Gozen's theme from Onigashima for sure, but I'm also partial towards the OST's used during the CCC collab like Spinal Coaster.
Edit: Oh, didn't see the anime-specific part. In that case I might go with Apocrypha actually, I quite enjoyed some of its tracks.

TBH the only ones I've watched are zero and UBW 2014. Out of those two I prefer zero. I didn't like all of it tbh, but there were a few soundtracks that I really loved, and one in particular is still stuck in my head for some reason even though I don't like it all that much : /
There’s only one best track in all of Fate: “Die Lorelei.” Full stop.
But, plus points for Apocrypha — the main OST “Apocrypha” really captures the scale of a Great Holy Grail War, “Affection” has 100 times more emotion than the series itself, and “Necromancer” is just such a fun, off-the-wall track.
Other personal favorites: “New Dawn,” including both the FSN Realta Nua and UBW anime versions. It’s one of the single most perfect juxtapositions of a song with a scene, one that captures both the hope as well as the deep, deep sadness of that moment. It also plays on the home screen of the Heavens Feel route once you clear the true end, which is a subtle but potent reminder of Shirou’s journey from UBW to HF. I also really like Hideyuki Fukuswawa’s version of “Deep Slumber,” which I think packs much more emotional impact than the VN version.
Probably my favorite OST from de animes of the Fate Series it's from de 2006 and Zero. UBW is also good, tho. I'd like to mention others fates animes, but this is only for the main ones:

Given that you mentioned anime outside of this franchise then my answer will be pretty open.
Most of the time I really like the music Yuki Kajiura is involved with. Among those series are Fate/Zero, Kara no Kyokai, Puella Magica, Noir... but my favorite OST must be .hack/Sign though Magia from Puella by itself almost took the lead.
I guess it could be the nostalgia.
FLCL's soundtrack is also great but I feel it loses something without the anime.
On another note the rather flawed Tsukihime anime has a nice soundtrack but the rest is kind of meh.
