To be honest, you would be much better off farming exp and levelling up your servants. Tackling Camelot with max lvl 60 servants is gonna be a bad time. Also, I personally wouldn't count on using a few specific teams. You've got the right idea already, just taylor your team to the enemy classes you will be facing.
A possible team comp could be a crit team with Ozy/Kintoki, Hans and a support Waver. Kintoki is a good self-sufficient crit servant who deals more NP damage (assuming you have him at NP5), while Ozy is better overall and has more synergy with Hans after you reach his third ascension and unlock his third skill.
Cu and Herc should always be kept on the backline, that's where they function best. For Gawain (and a lot of Camelot) Robin and Euryale will be very useful. Pair them with NP gen units like Waver so they can fire their NP off as much as possible. Euryale + Stheno is also decent, both of them have charm capability so you could charm lock male opponents.
As for servant recommendations:
Saber - Lancelot is the definitive arts/crit servant and functions very well with the right team, probably the best SR saber right now, though you would ideally put him in an arts team with servants like Waver or Tamamo or Jeanne. Hans works for him too. Musashi is also coming during the new year gacha, and she is arguably the best offensive saber (with Merlin). In the meantime, for a budet option, Caesar is okay, and when you clear Camelot, you will get Bedivere, who is also good for a 3*.
Assassins: Jack or King Hassan work best offensively, but they are both 5* (King Hassan isn't available until next year too). Carmilla is a good 4* assassin, and Fuuma is 3* and functions as a budget Jack.
As for offensive Casters, Xuanzang is the way to go if you want to kill assassin bosses. The only other offensive casters are AOE farmers, so not as effective. Also, just gonna mention Merlin here because he is honestly so good that with him around you'd barely need offensive casters anyway. If you want to roll for anything, gameplay wise it's never a mistake to roll for him.
