I remember reading somewhere that all servants will have the humanoid trait. Take that with a grain of salt though, the developers are free to change this at their discretion.

Specifically all playable servants have the humanoid trait Tiamat and Goetia both lack it.

In the U.S. game? Yes.
In the Japanese version, there’s an Avenger called Hessian Lobo that blurs the line between humanoid phantom (Hessian soldier) and beast phantom (The gray wolf phantom) as they’re two parts of a single anti-heroic spirit.
So yes and no.
