Hydragyrum can be negated on turn 1 of battle, whereas Herc's CE will be important late in a tough fight, when you need to tough it out for a few turns to reach a goal.

I'm one star away from being bond lvl 10 with Hercules. Everytime I see someone talking about Herc, his bond CE gets mentioned. So I'm wondering if it really is better than something like Hydrargyrum.

The OP doesn't seem to know how the guts mechanic works, so I'll explain instead. The reason why Heracles becomes a 5 star when he has the bond CE equipped is because he gets 3 guts which will make him last 3 turns. If a solo servant dies while having guts the turn will end immediately and in this case Heracles will survive 3 turns by himself even if he dies every turn.
