I know at the current moment we are only midway through FGO 1.0 and it would be months until Salomon. SPOILERS ALERT ! Tons of Demon Pillars. However, according to the JP banner timeline, there would be a Scathach banner lurking around June. We could easily see Scathach oneshotting those 1 mil HP Pillars in Salomon like it’s no big deal with numerous videos available on Youtube. And I must admit she has one of the best ST NPs in the game, with an absurd damage burst, but why Scathach for Demon Pillars ? From my own digging, Demon Pillars has the Sky and Massive attributes while Scathach would only deal extra damage to Divine or Undead via God Slayer, so that buff is basically useless against them (I think?). And Lancers receive 2x damage from Demon Pillars. Would not it be more effective and efficient to use other ST Servants from either the Calvary classes such as Ozy or from the Avenger class aka Jalter?

First, not all Demon Pillars are Beast class which you are referring to Lancers receives 2x damage from them. Even though, Knight classes deal 1.0x damage to them. Second, from what I know servants receives bonus damage in this chapter, starting from 20% damage of bond 6 to 100% damage of bond 10. Third, at any chance one of the videos you are referring belongs to Luck EX Lancer? His servants are maxed leveled and at NP5 also, thus massive damage.
It is true though that Jalter will outdamage Scathach in terms of neutral damage. With the availability of Merlin, Jalter + Double Merlin can one shot Goetia.

Demon pillars in Salomon has regular classes, like saber, archer, etc. The one you saw probably is the archer one, if that's the case, of course she would do massive damage.
Not to mention in Salomon you'll get damage bonus from bond level, like what omrus said. Bond 10 servant gets 100% damage bonus which is plenty
