I am looking for a 'gameplay wise' grail suggestions and I dont grail 5*s.

Do you use hans? If your strugling to keep him alive he's a good choice to grail to lvl 75, yeah kuro is also a great choice too she's basically the best 4* archer. Idk what other 4 stars you have so idk, are you lacking in any class atm? Some 3 stars are worth grailing if you need support in an area
I miserably lack in lancers. Cu is the only one I have but I hope I gonna summon Lalter one day! One day for sure!
I have Hans 10/10/10 but kind of drop him after I got Waver.
Same im hoping for her to one day arrive at my chaldea too, well you could always grail proto best boy a bit if you really needed to, but with a support lancer and cu you should be fine against any archers. More saved for Lalter lol
I had Hans glued to my frontline through Babylon as I lacked any of the better supports. But even though I say that, I didn't and wouldn't grail him. It's only about 1100 HP (for L65-75), and that's not a lot in anything challenging. If grails weren't limited, sure. But otherwise, the leverage you get in adding those 10 levels of attack to others seems a lot more efficient.
I solved Hans's fragility by using CEs, mostly Volumen Hydragyrum. Those 3 invul hits at the start are worth probably at least 3-4k, if not more if there are crits. It would give him time to get the NP heals going. And sometimes I even found myself in the 3rd battle and still have it up :)
But even if it didn't last more than a couple rounds, or sometimes just a single round, once I had his heals going he had quite the lasting power (except when there were constant AoEs). So, while maybe not as ideal, a CE with something like a 30-40% starting NP gauge might work as well so he could NP on T2 if needed. Something like Grand Puppeteer I think works well, as it gives 50% starting and +15% Arts, though only for 3 turns. But that's when I usually focus on getting Hans up anyways. So maybe you might be able to OC to 200% at the start if you don't need it right away, or just forego Hans using cards at all if you need damage done.
So, for the TL;DR version... I think you "fix" Hans using CEs, and not grails.

EMIYA, if you have him. Quality AOE if you do his ST quests. Unless you have Tesla/Gil/Ishtar.
Santa Alter, AOE Monster. Unless you have a NP2 Drake with maxed Voyager of the Storm.
Bedivere if you don't have Musashi/Saberliz NP5/Rama.
Janta NP5 if you dont have AOe Lancers aside from Romulus and Hektor.
I have saberlot grail to 90 with 10/10/10 skill and even at np 1 he hit like a truck even to archer
