I'm debating whether to secure a Gilgamesh or a Jack The Ripper for my Chaldea. I honestly can see the ups to having both, but realistically, I think I can only get lucky enough to pull one. I'm currently gunning for the Buster Meme team of Merlin and Jalter, and I'm trying to build future pull choices around them.
(I'm also not counting the GSSR as a solution to get both Gil + Jack, because knowing my luck, I'd pick up Jeanne instead of Jack.)
That said, who would you pick?

Gil has a rate-up next year, to the best of my knowledge Jack's next rate-up is in two years, so I don't think you have that much of a choice here. Just go for Gil in 2019 year and Jack in 2020, unless she spooks you first.
Personally I'd go with Jack, just because Gil is reliant on crit stars while Jack can generate them. One is simply easier to use than the other.
Gil is awesome and a limited servant. Jack is awesome but is not limited and can spook you any time. In fact both of my copies came during non jack rate up banners. It will be easier to obtain jack if that helps you.

I got Jack the Ripper for last fall's gssr and have not been disappointed. I'm a big fan of crit teams and jack has a lot of utility with her evade and quick up, buff dispelling, and heal on a quick cool down.
I'm about the single target noble phantasm so I haven't been about Gilgamesh. He doesn't have a survival skill either. Maybe it's because I don't like Gilgamesh as a character and actually like jack, but I'd suggest going for jack myself.
