NP1 will allow you to go to 100%, and will give you Overcharge lvl 1.
NP2 will allow you to go to 200%, and will give you Overcharge lvl 2 @ 200%.
NP5 will allow you to go to 300%.

No, this is wrong. Previous NPs in a turn will add 100% to the following NP bar of the next NP in the same chain.

So to get to overcharge level 5 you would need a servant with 300% charge (NP5) and two NPs used before that NP.

Say for example if 3 NPs are activated in a row and their charges are as follows: 200%, 100%, 300%. The first one would be overcharge level 2 (200% without any bonus), second one would be overcharge level 2 as well (100% + 100% bonus from previous NP), and the last one would be overcharge level 5 (300%+200% from previous 2 NPs).

I hope that clears things up a bit.

Yes. Previous overcharge does not get carried over. In a NP chain, second NP will have 100% more charge and third will have 200% more no matter what. That's it.

And NP overcharge effect triggers at every NP, but increasing in effect for every 100% you have.
