By unkillable I mean that the defense and healing buffs are flowing so constantly that it is near impossible for any damage dealer to out dps it. Or if there is some other form of tanking endless hits I am not aware of. Trying to get ideas for an anti-boss zombie team.

I find that it really depends on the boss. For e.g. ***SPOILERS***
For the final boss in Babylonia, the boss constantly removes your buffs. It makes servants like Hans practically useless since his NP will at most fire off 1 turn before the boss removes the buffs next turn.
However, generally I would say a team consisting of Jeanne, Hans/Tamamo and a Waver might do the trick. Tamamo will generally be preferred to Hans.
Jeanne NP provides team Invincibility + Def Up + heals.
Hans NP provides team buffs (Atk + Def) + Heals per turn, his skills don't really provide much in terms of zombifying your team.
Tamamo provides team Heals + NP up + CD reduction (very good sync with Waver), plus provide a arts buff that heals and a Minus NP charge on enemies.
Waver NP provides a NP reduction plus potential stun on enemies, while his skills provide team NP up + atk up + def up.
What this does is that the enemy takes very long to charge up his/her NP, while you are constantly firing off Tamamo's NP to reduce the cooldown on Waver's skills, which helps Tamamo fires off her NP even more. When the enemy manages to fully charge her NP, fire off Jeanne's NP (team Invincibility) to tank through.
Thus the zombie team is formed.
Tamamo, Jeanne and Mash. Tamamo will lower skill CD+heal, Mash def up+taunt, Jeanne regen and invi. Jeanne Mash and hans also can work. But best I think is tamamo and double mash.
What I’ve used before is a Waver, Tamamo, and Irisviel. Irisviel and Tamamo both help with the healing (of course) and Waver has his stuff that he can do which helps out too. And everything works out since they all have Arts NPs

Whassup Homies with a shield, Marie Rider + Marie Caster + Mashu.
Default/Battle suit/Atlas MC.
I use the first as my general stall team and the second for anti-male stall team.
Another stall-like teams that i used pretty often :
- OG Nero + OG Chu + Heracles.
- OG Chu + Proto Chu + Caster Chu.
- Jeanne + Medea Lily + Mashu.
My latest Tank party :
- All Star Tank party, D'eon + Mashu + Scat ass + Vlad III Lancer + Georgios + Leonidas.

Hans lancelot saber and support waver and use og cu for anchor, not exactly unkillable is more like you kill the boss so fast they usually didn't manage to put a dent on this team
I have a preferred setup for a specific boss type, the ones with AoE attacks with a high hitcount.
Asterios, Mash and Tamamo-no-mae.
Asterios lowers the attack of the boss, Mash increases your defence and Tamamo keeps everyone alive and going through her heal and NP gain.
by the second NP chain, the boss deals like 0 damage, Critical attacks and Charge attacks included.
The problem is to keep the party(specifically Asterios) alive long enough to get to the second NP chain.
But once you get rolling, stopping is practically impossible.
Marie + Marie Caster + Support Marie
Very effective against male ST bosses like Herc from Nerofest
Definitely Mash, (insert arts servant) and Waver... u know whats even better? Replace Waver with MEMERLIN when he comes out... not only you can survive a lot better than any other servants out there (looking at ya Cú) but you could spam NP like Chloe or Squirtoria but stack ARTs NP for more and more and more CHAIN ARTS NP... ( Medea is still Better, LeL get rekt)
Favorite Unkillable is definitely Merlin, Mash, and Jeanne. From rotating between Jeanne NP invincibility and recover, Mash high NP gain and defense boost, and Merlin NP gain and recovery, with all arts chains. When running from Gorgon it was such an easy fight out lasting her and dealing somewhat decent damage.
oooh here i have the unbeatable one: iri + schez, only those 2. make sure to increse iri's np gain and THAT'S IT, guts for like the whole battle. i love running those two alone, they never die.
