So when I started playing the game, I looked up the tier lists for 3* and below, primarily siting the one on this site. One of the things I tried to avoid is making a mistake I did with other games with having barely any support. However, now, it seems like I have too much of it and can't do dmg properly.

Saber: Caesar
Archer: David
Lancer: Cu (original)
Caster: Hans, (also have medea but at np1, so useless)
Rider: Ushi
Assasin: Emyia (assasin) (only non support I have)
Special: Mash
This resulted in me having quite a sturdy defense. However, when it comes to truly important bosses (like many in camelot), I ran into the trouble that its very difficult to outlast many of them while doing barely any damage. I did pass camelot by relying on support dps but for the future, should I change my servants to include more servants focused mainly on dps? Should I replace any of these servants?
Caesar, David and Ushi are, in fact, DPS, just with supportive skillsets. When it comes to 3-star servants, you want to reliably charge their NPs. The aforementioned servants can hit for anywhere between 100-200K damage at NP5. You're honestly fine in the DPS department, you have all the good ones leveled it sounds like.
You need at least 2 or 3 for every class, saber liz is free and great dps the next best saber is bedivere and fergus, you can add robin and euryale they're boss nuke and billy can melt any saber with his crit, as for lancer proto cu after his strengthening quest he can be your crit lancer leonidas is a good tank and buster support, george and alexander can be ushi's support, considering rising berserker like lu bu and shakespeer to support him since there isn't alot of dps caster
You might want to consider adding robin and cu proto for dps. Otherwise, look to roll for buster based servants as they will be much more powerful with merlin coming soon. Also, it seems you have not participated in events with free 4 stars yet. Those are immensely powerful. Besides the christmas event jalter lily, the next one will be nobunaga around march next year. Finally, if and only if you have extra money and still feel a lack in powerful servants, consider rolling in the guaranteed 5 star gacha.
Ur fine. Maybe because you followed the tierlist, you have a strong budget line-up. Besides, you already cleared Camelot, Part 1 doesn't get harder than that.
Next singularity you are gonna be using that Kerrytsugu.
