So, I was looking through gramps' abilities and such on the wiki, and I see his third skill, "Evening Bell EX" lowers insta kill resistance by 100% at level 10. Does that mean he's guaranteed to insta kill anything?

Logically speaking that would be cheating, and he'd be more broken than Merlin and would break the balance of the game. Each servants and bosses has death resistance so it's minused to his insta kill resistance decrease and it's still astronomically hard to hit just like how Shiki has 100% instant death resistance decrease, but doesn't kill everyone if not Camelot would've just ended up as a joke and not a hard chapter that made JP players cry, honestly.

Most bosses have much higher instant death resistance than 100%, so no.

EDIT: the 100% thing doesn't mean it reduces death resistance BY 100% (ie, everything), it means it subtracts 100 from the original resistance percentage, which for bosses is quite a bit higher than 100, so much so that it barely makes a difference to your chances.

Think of it this way.
idk the exact numbers, but if enemy bosses and servants has liek, say, 500% insta kill resistance, then lowering it by 100% and they still have 400%
so to answer your question, No. he's not guaranteed to insta kill anything
the insta kill mechanic only matters at battles that don't matter. liek farming

Since no one here has actually properly explained how instant death resistance down works I guess I will - rather than death resistance - 100% as is being said here what happens is death rate * death chance[100% on his NP] * (death resistance down/death rate up + 1), so taking the common boss instant death rate of 0.1 we see 0.1 * 2 gives a 0.2% chance of instant death against most bosses.

Well, actually the instant kill is still not reliable. Only when you have all the thing in perfect condition you may instant kill some mooks, like shiki's max bonded CE, and Grampa's NP overcharged, he can instant kill some enemy especially with low death resistance, but still not a servant boss.
If you can instant kill a servant, then I can guarantee that your luck EX+++ can make it to roll a SSR servant with a single ticket.
It is indeed not reliable. Since normally a enemy servant' default death rate is only 0.1%. No matter what buff on and enemy debuff on, this figure won't exceed 1% generally.
The instant kill and burn in my opinion are two damaging machnisms which players won't work it fine to enemy servants, but enemy servants would deal extremely high damage to players. Haha.
It is even worse than RNG rolling of story mode summon.
However, Grampa is broken becuase of his combination of 1-2 skill make he very tough in combat with riders, then he can provide consistent DPS. And he has one excellent buff resistant which means like charm and instant death is nothing to him. Therefore you can consider him as Assassin class Cu Alter with much more debuff resist and better buster damaging.
