Eh, always go for materials first. After that Exp cards and MP, and lastly Fous and Monuments if you need those.

Item priority from event shop
I've already gotten all the hearts from the shop and I have over 1000 gourds. I'm not sure whether to get mana prisms or the other transcendence items.since they're relatively easier to get. Mana prisms sound like a good idea for upcoming shop CEs like Chaldea Lunchtime.
Any suggestions?

I bought Hearts and Serpent Jewels. But since dust and dragon fangs are easy to farm, isn't it better to focus on harder to get items, like Fous and MPs?

From my perspective, mats always get first priority. If you have like 400 dusts and fangs in your inventory, you can probably skip it and go for MP instead.
