I do not see her much in Japan, but if you're interested ... go for merlin :P
Also her bond CE looks pretty good, but is up to you.

I have about 210 SQ saved up, and I really love both of the servants. I’m only going to spend all of my quartz on one of the banners, so that I have a better chance of getting the servant I want. ;-;
Which servant is better in the long run (taking into account the introduction of break bars, skillsets, skill/np interludes etc.)?

Gilgamesh by far margin. I prefer Ishtar cause I love Rin. But efficiently wise, Gilgamesh. No questions.
Game still easy enough to pick the one you want without focusing on the best though.
Gil has better gameplay than Ishtar.
Honest for me, if I go to pick up one Rin, I will choice Ereshkigal
But rolling Ishtar will make you have CE for that Christmas event with lottery.
Gil's unique thing is his 3rd skill make great advantage than other Archer. Both of them rely on support for challenge quest. Ishtar has somehow better durability due to her high debuff resistance and 1 turn invul. But Gil with decent support will chop enemy in few seconds. Team of Gil+4060 Merlin is BIASED for almost any circumstances.
Actually, if Rin had a real invulnerability skill, it would definitely be better than Gil. Problem is with invul skills, random chance essentially destroy the skill as the cost of failure are losing the unit in battle.
This is in IMHO the reason why Ishtar does not convince as much as she should. They put the invul as an addon, forcing you to rely on safe measures as mystic code skills, Jeanne or Merlin.
Not really, skills aside Ishtars hit counts are a LOT worse than Gil's which hurts her tremendously as it leaves her with much worse NP gain(furthered by a lack of Golden rule) and producing fewer crit stars(which is compounded by a lack of c star draw skill).
Add to this at NP1 Gil's NP does more damage even against non servants, and does that damage more consistently (built in 30% boost, the ability to do far more damage against servants, doesn't need to rely on a turn delayed buff and praying for a brave chain/delaying NP for guaranteed brave cahin) and a slightly higher attack stat and Gil outperforms Ishtar by a pretty far margin even if she had guaranteed invul though in either case you want to run Merlin with both of them anyway so his Invul will be their regardless of if Ishtars was guaranteed.
Tho if Ishtar's 50% buster buff goes off along with her higher Charisma skill, doesn't her NP deal higher damage than Gil's?
If Gil and Ishtar is your favorite, for me instead of comparing them just flip a coin.
You got the head take Gil, got the tail take Ishtar or use the similiar options.
Since no matter who you choose both is a good servant ( to be honest, they're too good as a servant ) and can cover 3 roles plus they're very strong from gameplay perspective.
I have Gilgamesh myself and i can tell if you got him/Ishtar it's enough to cover your ST and AOE roles at least from the archer class, just don't use them vs tough Lancer enemies.
