Xuanzang's actually pretty good tho, she's pretty much the best at what she does. That said if you really don't want her, I'd say go Assassin since that's the banner where you won't be disappointed with either outcome, based on what you've written.
To go into some deeper explanation though, it's not that Enkidu doesn't go well with Merlin, it's that there are many other lancers who benefit more from Merlin than he does. Enkidu, despite his glaring flaws in his NP gain, ATK stat and deck, is still a pretty good lancer with suprisingly high NP damage. Also, idk if you want an ST servant over AOE because you prefer the bigger damage, but just know that the field becomes a little more level when Shinjuku happens and they introduce multi-tiered health bars that you can't one-shot.
Altria lancer is great at spamming her NP but her damage is on the low side. Karna is better, after all his strengthenings he becomes a good crit servant and can deal some pretty strong ST damage against divine enemies, which a lot of archer bosses are.
With Musashi, it's not clear that we'll even get the other servants on that banner since they all showed up in those thanksgiving banners already, and even if we did get them again, they have rate-ups on different days, so Musashi's rate isn't affected.
Gameplay-wise I'd still make the argument that the caster banner is the best, especially since you don't have any of them, but really it ultimately comes down to who you like. I mentioned earlier that, at least from reading your post, the Assassin banner is the one guaranteed to not disappoint you, and if I'm right about that (and your opinion hasn't changed from reading what I've written about the lancers and casters) then that's what I'd advise you to roll.
