What should I pick EMIYA or SIEGFRIED?

Well, Siegfried is probably one of the worst 4* Servants, so i would go for Emiya, unless you like a lot the character

No, he's not. The only thing you need to make him strong is to pair him with George and bam! everyone is vulnerable to Sieg's 3rd skill and NP. Also, later on he gets a buff to his 3rd skill, that adds a mana burst to it, which is pretty good.

Yes because spending 2 character slots to basically make a single servant is such a great strategy, you only have to give up all your crit stars to a 2* who will be doing no damage and dedicate command cards to him to eventually get his NP up at the same time as sieg in order for either of them to be useful. There's a reason he's a meme. Well when he gets his strengthening he'll be a decent farmer at least and if you just really want lancer alter/lancer artoria or Liz dead then he's your guy but outside of those specific fights he's really not great.

The vast majority of servants requiere some kind of support to make them reach their full potential so that's not a problem that you use George to enable Sieg's abillities. Sieg is not a crit servant to begin with so why would you be upset with George taking stars? If anything it will just help him build his NP much faster. Also his arts cards will help Sumanai build his NP faster too. And you don't have to get their NPs at the same time, as dragon effect from Ascalon lasts three turns. And you know, George is really usefull outside of making everything a dragon, as his taunts will protect your third hero (Waver, Hans, Merlin, etc), and Sieg himself.
