You cant go wrong with Herc. He is a good berserker and does not require much babysitting to do his job. Dont worry too much about the double-edge sword, Herc is rather durable for a berserker, and it gets better if you can max bond CE or provide him with support servants.
Other than that, Emiya and Carmilla are both solid choices. For me, Emiya is rather underwhelming now but his strengthening is (slowly) coming. Carmilla is self-sufficient, and she can fit in better with your Nightingale and make use of Night buster buff and heal. In short, Herc > Carmilla > Emiya. Of course, end of day choose the one you like the most :)
