So when looking at servants, each one will have a pretty high percentage in the damage section of the NP, based on the level. If a single target NP has a 600% damage percentage, then the servant will do 600% damage to a single enemy. But for AOE NPs, the number is lower, for example 300%. Does this mean that each enemy receives the same 300% damage from the NP?
Pretty much, yes. It won't be EXACTLY the same amount of damage but it will be very close.
Also keep card type in mind. Buster NPs have lower modifiers because Buster cards innately have the higher 150% modifier. The opposite would be true for Quick NPs.
There is some variability in exact damage, ranging from 0.9x to 1.1x of the damage formula (IIRC).
AoEs typically do less damage per target than ST NPs, but this is situational, and sometimes an AoE can be as good or better due to special attacks and/or overcharge.
