Was planning to get Jack for her star gen and anti-female NP, but they say gramps is the best assassin servant one can get and I know that he's apparently a buster based assassin... So how does he create stars? Or rather, what is it about him that makes him take the top spot for assassins? Besides the fact that he's the very first assassin, and the whole angel of death shtick
Ok so first off its now that he's good by him self its just the fact that he has a Berseker deck which is what the games meta shifts into along with the fact he's very self succifient. Ok so first off merlin just breaks the game and works good with king hassan secondly I would say jack has edged him out again since Skadi is a thing now.
As for how he creates stars he really dosen't he just buster brave chains for a lot of damage hes a greedy assassin.
He isn't necessarily the best assassin, it's arguable between him and Jack. What people like about him (cool points aside) is his high durability (has access to the best guts in the game by far as well as attack+defence up, heal and debuff resist) and buster deck which makes him better suited for Merlin buster memes.
He generates stars the same way jack does, with quick cards. His quick hit counts and star rate is the same as Jack, but he can't quick chain, so his stargen overall is inferior. With Merlin's passive stargen that won't matter of course, but in a vacuum (and also now that skadi quick support is a confirmed thing), I would make the case that Jack slightly edges him out.

But how Merlin or another caster survived against rider? As far as I know, assassin only useful against rider for class advantage.

Buster Oriented team is focusing on Hitter's critical Buster in just 1-3 rounds. A decent DPS can provide >400000 damage in 1 round, or >200000 damage of his/her one critical Buster card. However, this should be based on decent support's all Buff-on condition (dual Merlin).
Similarly, although Nightingale is a Berserker that every class could against her, 2030 Nightingale can still also provide decent support for a Buster oriented team,.
Art team or "Quick team" (without Skadi) cannot provide such effect then Caster support are normally not commended for Jack or other Assassins against Riders.
Only Shiki+Tamamo, an ideal Shiki's NPAA critical Art chain providing decent damage and NP spam is somehow comparable as this Buster team by dual Merlin. But this is still not a conventional art team,

Merlin's 2nd skill and OP NP. Dual Merlin = 8 rounds 3 team invulnerable. And dual Merlin's NPs = 10000-20000 hp recovery for every team member in 5 rounds.
And the snowball effect from 4060+NP+Merlin's own NP charge can also make NP spamming for Merlin possible then the healing effect could be accumulated even much better than Medea Lily.
Merlin's damage is fine against riders tbh. Just don't expect him to do any real damage, you want him for support, it doesn't matter what he's up against. His heal Np takes care of his survival.
And while assassins typically can't do that much damage, Jack and especially King Hassan are huge exceptions to this and can be used against any class other than (arguably) casters.
Thanks for the advice guys! Wow, this is going to be a tough few months... the one's on my list is pretty much Jack (and/or gramps) then Merlin (and/or any of the three other casters in the guaranteed summon). The only other servant I'm interested would be Raikou Lancer... she wont be avilable for quite some time. And lewd nun Kiara
