I know most people say to grail your waifu (*cough* Astolfo lvl 100 10/10/10 NP3 *cough*) but I'm wondering who to grail next. I already also have Medea at 80, and my top choices for next grail are: d'Eon (waifu on almost same level as Astolfo, good tank), Saber Lancelot (crit beast, need to get to 80 first), Medea to 100 (waifu, good for pesky soul eaters and boss ghosts), Tamamo Cat (waifu, better daily farming), Herc (bc I don't have Cu Alter, need to get to 80 first), Shiki (waifu, bc I don't have a better single target assassin), Amakusa (bc ruler? idk), or Robin Hood (bc strong NP).
I have other decent options (like Salter or EMIYA NP2) but not feeling the need to do it, and I don't have any decent 4* or 5*'s otherwise (I guess da Vinci? eh).
Or maybe I should just save it for someone else I might get in the future? Like, if I get Gorgon I'd love to grail her.
EDIT: Because I forgot to mention, all 4* and up above are NP1, all 3* and below are NP5.

Grails don't really make much difference in terms of stats, so I'd recommend to grail your waifu or save them for a future waifu. If you really want to grail someone right now I'd go with herc.
Grails actually do make a difference in terms of stats. The stats per level gained after grailing are linear, which means that each servant's growth curves past their level max don't affect their stat gains - all grails are created equal.
About 1000 per 10 levels is the average grailing power however, the most benefits are reaped by servants who have more levels to gain per grail. In about 30 levels, the average stat plus is 2500. Grailing stats are kinda wonky and a grailed 3 star servant bumped up to 100 can at best approach a 4 star in terms of stats or in some cases, even a lvl 90 5 star with no Fous attached.
So lvl 90 servants gain the least stats per grail, given they only have 10 levels before they max out but they do have the best stats since they're 5 stars. In other words, if we're looking from the efficiency standpoint, I think it's 3/4* servants that get the most out of grails, 2 and 1 stars are just trashed in terms of base stats so they can fall behind anyway.
For example, a lvl 100 Kojirou has 8912 ATK.
With Silver Fous 9912 ATK and future Gold Fous 10912 ATK. That's why people say to grail for waifu/husbando reasons, not for gameplay. Grails + Fous can make a lower rarity servant rather quite playable but it requires a ton of dedication. But from a resource perspective, level 1-100 has the same amount of EXP cards and 20 Fous + 50 Gold Fous is the same for every servant.
To add on to this, when thinking of grailing for gameplay reasons, this very direct boost plays an important role. Since it is roughly the same boost for all Grail candidates, the servants that benefit most from grailing are the ones that rely heavily on a primary stat to fulfill their niche. For dps the obvious boon is the extra attack stat which buffs not only their normal attacks and base damage of crits but also in some cases boosts their longevity and ability to remain on the battlefield. For tanks, conversely, and supports, the extra health helps them keep their support up longer depending on the support. Generally their attack gains so nothing for them outside of helping them np more often though which is why they're kind of candidates you only Grail if necessary. Lastly, the worst candidate for grailing is servants whose value banks heavily on skills or on spamming an np. While the health boosts and base damage boosts are of course beneficial, their main purpose is their ability to np spam or to use their skills as often as possible. The extra stats don't affect this much at all.
Tldr: grailing servants for gameplay is in fact more beneficial for some than others. High level dps that use percentage multipliers well are the prime candidates. Tanks or weak supports are secondary candidates to help them last that little bit longer. NP and skill reliant servants are not the best candidates but do still get benefits.
Ultimately though just Grail who you want to Grail as the game is meant to be played at level 70 anyway. Even at level 90 most quests and boss battles become stupidly easy forget about level 100
What I mean is, the game isn't really challenging as long as you have 3 neurons, and you can beat it with servants of any stars.
So why not grail a servant you enjoy having in your lineup?

Herc and saberlot to 90. Shiki is NP 5 right? Then, to level 90 (most of her damage comes from her NP). Chloe now that she is released to 90. Going past level 90 is too expensive in term of grails.
Chloe will be np5 and Emiya is still a strengthening quest away from being full strength while still having that AOE np. Chloe is essentially what Emiya should have been
Herc and saberlot are the best candidates from a gameplay perspective. Robin is actually not a good one from gameplay as his damage is mostly tied to that np and his talents.
I'd go with d'eon though among the ones you've listed. More health benefits her tankiness. And the plus side is you'll be the only one in all of NA probs who has dual level 100 10/10/10 tra-I mean charming waifus.
(The best servant to Grail though will always be Arash. Game can't kill you if you have the biggest nuke!)
I'm really tempted to grail my saberlot, I just love watching him soak up stars and then give a beat down. I like playing him him more than my nero bride. But I have so many gold sabers, I ought to spend my grails on my weaker classes...
