Well looking at your the servants the #1 problem I see is the critical lack of support servants while having a lot of amazing damage dealers, but i'll try to make semi workable teams around each team archetype.
Arts team- You already have possibly the strongest arts np spammer in archer artoria, but lack either waver or the best arts support tamamo, which makes this a lot harder to make. First off you're gonna need to use support servants to use this I would recommend for spamming and np damage tamamo and for extra utility and survivability waver, with your own support of mozart. If you need craft essence suggestions just use formalcraft and its lower variety's on artoria and really don't need any on mozart. (Support)Waver or tamamo/archertoria/mozart. Backline survivors like herc
Crit buster- This one you can do all on your own and is a lot simpler than a arts team. The main damage dealer in this party is gonna be raikou, and as for supports use a waver that has a fragmen of 20/30 and then add your own hans.
Hans might have to replaced for a star generator if his star generation skill isn't a high enough level, but always keep waver. As for craft essence's for hans if you have it put 20/30 and for raikou a craft essence like victor of the moon for both crit damage and buster increase. (Support) Waver/Raikou/Hans. Backline could be lancelot since he can crit a lot or just herc and such.
Quick team- This is the easiest to assemble with only needing really a star generator since hans is a ok support here. So as I see it here use Scathach as your primary damage dealer, hans as a support ideally with 20/30 or k-scope, and finally a support jack for a star generator.
Hans/Scathach/Support(Jack the ripper).
As for sanzang she can be in a arts team for spamming her np and tamamo lancer should be in a buster crit team, but instead of using a crit generator like jack I would recommend dantes since tamamo's first skill boosts his star gen and his 3rd skills apply's debuff immunity 1 time which is good for tamamos third skill and just use hans instead of waver.
