Do you just grind until you've bought out the shop?

Pretty Much. There's a lot of different types of quests and currencies to farm, but the main point is just that: grind every currency until you clear the shop. There will be guides up on the internet which will walk you through the most efficient way to get through it if that's what you want. It's similar to go west if you were playing during that.
Yeah what zer0z said, also I would recommend making a shopping list of sorts since if you don't use apples there's no way to complete the shop.
A question though.
Assume that you use your AP efficiently so that you won't waste any of it from the timer, everyday until the end of the event.
How many apples do you think would it take for you to clear the shop?
Just on average to clear everything around 8-20 I would think I've never fully tried to clear a shop before because of lottery events, but I do have this tool that is pretty easy to use, but I have no idea about the event itself like how many shop materials we get per run and such. Sorry
Honestly, probably too many. I would recommend you just do what Mcjackingtin said, make a list of things you want (event CEs and Scathach's ascension items should be at the top) and then work to get those. I would guess you won't be needing apples to do that, depending on the size of your list. Once that's done, just farm as many other things as you can; you'd get a lot more out of your apples if you wait for the lottery events (ie, Christmas).
