In general, the difference between a good farmer and a bad farmer is the speed with which a servant can clear the farming node; at the right level, even bad farmers will be able to clear the node, albeit a bit more slowly. On the other hand, a good farming servant may not necessarily be able to clear tough story or event content. So, the trade-off is having a servant who can help you advance the story / get more event materials vs. a servant who can save you a few minutes (at best) per farming node; I think the first is much more important than the second.
You can also just borrow a good farming servant from your friend's list. If you don't have any good farmers from your friends, you're welcome to use my level 90 Minamoto-no-Raikou with MLB Golden Sumo (just ask for my friend code), but there are people out there who have even better farmers (e.g., Raikou with Kaleidoscope).
